Tortellini Salad

Ingredients

  • 3 cups tortellini, thawed or cooked
  • 1 (6-oz.) jar marinated artichoke hearts, marinade reserved
  • 2 6" zucchini, quartered & sliced
  • 4 oz. mozzarella cheese cut in 1/2" cubes
  • 3 oz. sausage cut in 1/4x2" strips
  • 1 cup shredded carrots
  • 1/4 cup parmesan cheese
  • DRESSING
  • artichoke marinade
  • 1/4 cup vegetable oil
  • 2 Tbs. white wine vinegar
  • 1 tsp. oregano
  • 3/4 tsp. basil
  • 1/2 to 1 tsp. minced garlic
  • 1/2 tsp. salt

Preparation

Step 1

Mix all salad ingredients together.

Shake all dressing ingredients together until well mixed. Toss with salad and refrigerate covered for several hours or over night. Toss before serving.
