CRANBERRY WALNUT OATMEAL COOKIES

Ingredients
- No-stick cooking spray
- 3/4 stick Crisco all vegetable shortening
- 3/4 cup sugar
- 3/4 cup firmly packed brown sugar
- 2 eggs
- 2 tsp. vanilla
- 1 cup Pillsbury all purpose flour
- 1 tsp. baking soda
- 1 tsp. ground cinnamon
- 1/4 tsp. salt
- 2 3/4 cups old-fashioned rolled oats
- 1 cup dried cranberries
- 1 cup chopped walnuts

Preparation
Step 1
Heat oven to 375 deg. Coat baking sheets with no-stick cooking spray
Beat shortening, sugar and brown sugar in large bowl on medium speed with electric mixer until creamy. Beat in eggs and vanilla.
Combine flour, baking soda, cinnamon and salt. Beat into shortening mixture until blended. Stir in oats, cranberries and walnuts. Drop by tablespoonfuls 2 inches apart on prepared baking sheets.
Bake 10 to 12 minutes until lightly browned. Cool 2 minutes. Remove to wire rack to cool completely.
