Rustic Pasta

Ingredients
- 12 oz fresh pasta
- 1 (15 oz) can pinto beans
- 1 onion
- 3 cloves garlic
- 1-1/2 tablespoons virgin olive oil
- 3 tomatoes, chopped
- 2 oz. prosciutto sliced paper thin - and cut into 1/2 inch strips
- 1/4 cup parmesan cheese grated
- 1/2 cup fresh parsley chopped

Preparation
Step 1
Add water to Pasta pro, set on a high flame and bring to a boil. While waiting; drain beans and whirl onions and garlic in food processor until a paste forms. Add pasta to boiling water and cook according to package directions. When done place lid on pasta pro and turn to lock lid onto pot. Drain pasta remove lid place pasta pro back on low heat. Add the rest of the ingredient reserving some of parsley for garnish. Heat through and serve.
