Ingredients
- 3/4 cup sugar
- 1/4 cup plus 2 tablespoons vegetable oil
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 1/3 cup matzo cake meal
- 1/3 cup potato starch
- 1/3 cup semisweet chocolate chips

Heat oven to 350*F. Spray a large cookie sheet with no-stick cooking spray.
Combine sugar, oil, eggs, and vanilla in a large bowl. Blend together using a whisk.
Combine matzo cake meal, potato starch, and chocolate chips in a separate bowl. With a rubber spatula, stir the dry mixture into the sugar mixture until combined. Divide it in half. With wet hands, form two logs, each approximately 3 inches wide and 8 inches long. Transfer the logs to a cookie sheet.
Bake on the middle rack of the oven for 15 minutes. Remove from oven and let the logs cool on the sheet for 5 minutes.
Transfer logs to a cutting board. Slice them on the diagonal into 1/2-inch-thick cookies.
Arrange the cookies, cut side down, on the same baking sheet. Bake for 10 minutes more.
Makes about 30 cookies.
