Ingredients

  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • 2 tsp bakin powder
  • 1 tsp pumpkin pie spice
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 1 cup dried cranberries
  • 1 cup pumpkin puree
  • 1 large eggs, beaten
  • 1/2 cup light brown sugar
  • 1/4 cup pure maple syrup
  • 1/4 cup vegetable oil
  • 14 cup orange juice

Preparation

Step 1

1. Whisk together whole wheat flour, all-purpose flour, baking powder, pumpkin pie spice, salt and baking soda. Stir in 1 cup dried cranberries.

2. In another bowl whisk together pumpkin puree, eggs, brown sugar, maple syrup, vegetable oil and orange juice. Stir flour mixture into pumpkin mixture until just combined.

3. Spoon into a 9" x 5" loaf pan coated with cooking spray. Bake at 350ºF until wooden pick comes out with crumbs adhering, about 1 hour. Cool in pan 15 minutes. Remove from pan and cool on rack before slicing.
