Ingredients

  • 1/2 cup whole wheat flour
  • 1/2 cup all-purpose flour
  • 3/4 tsp baking powder
  • 11/2 tsp pumpkin pie spice
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup buttermilk
  • 1/2 cup pumpkin puree
  • 2 large eggs
  • 2 Tbsp honey
  • 1 Tbsp olive oil
  • 2 strips bacon, cooked and crumbled
  • Maple syrup

Preparation

Step 1

1 In a large bowl, whisk together whole wheat and all-purpose flours, baking powder, pumpkin pie spice, baking soda and salt.

2. In another bowl whisk together buttermilk, pumpkin puree, eggs, honey and olive oil. Gently stir buttermilk mixture into flour mixture.

3. Heat cast-iron griddle coated with cooking spray over medium heat. In batches, drop heaping tablespoonfuls of batter onto griddle to form 3" pancakes (about 12). Cook until bottoms are golden (2 minutes). Sprinkle with crumbled bacon. Flip and cook until bottoms are golden brown (about 2 minutes).

4. Finish cooking and keep ware in a 350º oven (5 minutes).

5. Drizzle with maple syrup.
