Pasta with Pancetta, Pine Nuts and Shrimp

Ingredients

  • 2 cloves of garlic chopped
  • 8 oz uncooked penne pasta
  • 4 thick slices of pancetta diced
  • 1 small red pepper
  • 1 small green pepper
  • 1 small yellow pepper
  • 16 oz medium raw shrimp, shelled, deveined, tails removed, rinsed and drained
  • 1/2 cup frozen peas thawed
  • 3/4 whipping cream
  • 1 cup mascarpone
  • 1/2 cup parmesan cheese
  • 2-3 fresh basil leaves chopped
  • 1/2 cup pine nuts toasted
  • salt and pepper to taste

Preparation

Step 1

Add water and garlic to Pasta pro set on a high flame and bring to a boil. While waiting; sauce pancetta in a medium skillet until it starts to brown, add all the peppers and sauce for 3-4 minutes or until pancetta is crisp. Turn off heat, set aside. When water is boiling add pasta to pasta pro. After 3 minutes add the shrimp. Cook until pasta is just done and the shrimp are opaque. Place lido on pasta pro and turn to lock lid onto pot. Drain pasta, remove lid, place back on head and immediately add cream, mascarpone, peas, cheese and pepper mixture into pasta pro and toss until ingredients are evenly distributed and cheese is melted. If sauce is too thick add a little more cream. Remove from heat, Sprinkle pine nuts over top and serve.
