Chicken with Warm Potato Salad

Ingredients

  • Chicken breasts
  • 1/2 head of garlic
  • 3 bay leaves
  • 1 T olive oil
  • 1/2 lemon
  • thyme
  • Salt & pepper
  • 1 1/2 lb red potatoes
  • 1 lb haricots vert
  • 3 T chopped niciose olives
  • 1/4 C chopped mint
  • 1 T sherry vinegar
  • 1 T capers

Preparation

Step 1

Roast chicken, spiced with lemon slices, garlic, thyme, 1 bay leaf salt & pepper in 425 oven until cooked @ 20 min.

Cover potatoes with water in med. saucepan. Add bay leaves & bring to a boil; simmer @ 20 min. Microwave haricots vert2 in. & refresh in cold water.

Transfer chicken to cutting board & let rest for 10 min.

Set roasting pan over mod. heat& bring drippings to boil. Add sherry vinegar, then add potatoes & haricots vests; turn to coat. Remove from heat& gently stir in olives, capers & mint.
Slice chicken; season potato salad with salt & pepper & serve
