Pumpkin Rolls

Yummy Pumpkin roll that makes a delicious treat, particularly in November and December.

Ingredients

  • 3/4 c. flour
  • 1/2 tsp. baking powder (double acting)
  • 1/2 tsp. baking soda
  • 1/2 tsp. cinnamon
  • 1/2 tsp. cloves
  • 1/4 tsp. salt
  • 3 large eggs (room temperature)
  • 1 cup sugar
  • 2/3 cup pumpkin
  • 1 cup nuts (optional)
  • FILLING
  • 8 Oz. cream cheese
  • 1 cup powdered sugar
  • 7 tbsp. butter (room temperature)
  • 1 tsp. vanilla

Preparation

Step 1

Preheat oven to 375 degrees.

Mix dry ingredients, except for sugar, and set aside. Mix eggs and sugar until thick, and then beat in pumpkin. Stir in flour mixture until well combined. Spread evenly into prepared jelly roll pan (Line pan with parchment paper and grease or spray with cooking spray). Bake for 13-15 minutes. CHECK AFTER 11 MINUTES.

FILLING
Cream together cream cheese and butter, add vanilla. Add powdered sugar a little at a time.
