UNCLE JOE'S COOKIES (JOE FROGGERS)

An old black uncle Joe, who lived on the edge of a frog pond made the best molasses cookies in town. They were called Joe Froggers because they were as large as a lily pad and as dark as the frogs in the pond. Fisherman found they would keep on long sea voyages and started trading Rum for Uncle Joe's cookies. Today these cookies will keep as well in the cookie jar as they did in the fishermans sea chests.

Ingredients

  • 4 cups all purpose flour
  • 1 1/2 tsp. ground ginger
  • 1/2 tsp. ground cloves
  • 1/2 tsp. ground nutmeg
  • 1/4 tsp. ground allspice
  • 2 tbsp. Rum
  • 1 cup dark molasses
  • 1 tsp. baking soda
  • 1 cup sugar
  • 1/2 cup butter

Step 1

Stir together flour, ginger, cloves, nutmeg, allspice, and 1 1/2 tsp. salt.
Mix Rum and 1/3 cup water. Combine molasses and soda. Cream sugar and butter; add half the dry ingredients and half the water mixture, then half the molasses mixture, blending well after each addition. Repeat. Chill dough for several hours or overnight. On a well floured surface, roll dough to 12/4 inch thick; cut with a 4 inch cutter or a 1 lb. coffee can. Bake on greased cookie sheet at 375 deg. for 10 to 12 minutes. (Watch carefully so cookies don't burn.) Let stand a few minutes then remove from cookie sheet.
