Ingredients
- 1/4 C olive oil
- 2 large onions, halved & thinly sliced
- 2 T light brown sugar
- 1 can crushed tomatoes
- 4 C beef stock
- 2 T lemon juice
- Kosher salt & ground pepper
- 1 lb ground pork
- 1 egg
- 1 1/2 t cornstarch
- Lonely grated zest of 1 lemon
- 2 T coarsely chopped cilantro
- 2 scallions, white & green parts, thinly sliced
Preparation
Step 1
In soup pot, heat olive oil until shimmering. Add onions, cover & cook over mod heat until softened, @ 3-4 min. Uncover & cook until onions are lightly browned, @ 5 min. Add brown sugar & cook for 1 min. Add tomatoes, beef stock & lemon juice; season with salt & pepper. Bring to a boil. Simmer over mod heat 10 min.
Meanwhile, in medium bowl, combine ground pork, egg, cornstarch, lemon zest & 2 t Kosher salt, 1 t ground pepper & half the chopped cilantro & scallions. Using slightly moistened hands, roll slightly mounded tablespoons of meat mixture into balls.
Add meatballs to soup, cover & cook over mod. heat until cooked thru, @ 5 min.Stir in remaining cilantro & scallions. Serve
