Baked Custard Rice Pudding

Ingredients

  • 1/2 stick butter, softened
  • 1 cup sugar
  • 4 eggs
  • 3 cups half-and-half
  • 2 cups cooked long-grain rice
  • 1/2 cup raisins
  • 1 teaspoon vanilla
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Preparation

Step 1

Preheat oven to 350 degrees. Coat a 1 1/2 quart casserole dish with cooking spray.

In a large bowl, cream butter and sugar. Add eggs one at a t me and beat until well combined. Add remaining ingredients; mix well.

Pour into casserole dish and bake 55 to 60 minutes, or until top is golden. (Pudding will be loose.) Serve warm, or cover and chill at least 4 hours before serving.
