Ingredients
- 2/3 c self-rising flour
- 2 eggs, beaten
- scant 1/4 c milk
- 10 1/2 oz zucchini, grated
- 2 T fresh thyme
- Olive oil for frying

Step 1
Make a well in the a bowl with the self-rising flour. Add the eggs to the well and with a wooden spoon, gradually draw in the flour. Slowly add the milk to the mixture, stirring constantly to form a thick batter. Absorb the moisture from the zucchini in paper towel and then add to the batter with the thyme. Season to taste with salt and pepper. Heat oil in frying and add 1 T batter and cook 3-4 minutes until browned. Drain between paper towels and keep warm in the oven while frying the remainder.
