  • 1 egg
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon lemon juice, plus 1 teaspoon zest
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • extra-virgin olive oil, optional
  • crackers to serve

Step 1

Heat oven to 400°F.

In a bowl, beat ricotta, egg, thyme, lemon juice, 1/2 teaspoon lemon zest, salt, and pepper until well mixed.
