Turkey Meatloaf - Healthy

No sodium, very low sugar and fat turkey meatloaf. VERY good with homemade healthy ketchup baked on top. 2oz servings. Makes 16 servings.

Ingredients

  • 2 lb ground turkey breast
  • 1-1/2 tsp fresh ground pepper
  • 2 tsp finely chopped fresh sage leaves
  • 2 tsp finely chopped fresh thyme leaves
  • 1/2 tsp finely chopped fresh rosemary leaves
  • 1 large onion finely chopped
  • 2 cups oatmeal, uncooked
  • 4 egg whites
  • 16 oz can nsa tomato sauce
  • 2 tsp brown sugar substitute
  • 1 Tbsp Splenda
  • 4 Tbsp organo
  • 4 Tbsp basil
  • 1/2 tsp grated nutmeg
  • 1/4 tsp cayenne pepper (to taste)
  • 1/2 tsp red pepper flakes (to taste)
  • 1 tsp garlic powder
  • 2 cloves minced garlic
  • 3 Tbsp no sugar added applesauce
  • Up to 1/4 cup nsa chicken broth, as needed

Step 1

This is normally a breakfast sausage recipe but I've added Oatmeal, Egg Whites, Onion, NSA Tomato Sauce, Oregano & Basil.

Combine ground turkey with all other ingredients and chill for at least 1 hour and up to 24 hours.

Option #1:
Divide into two loaves. Place into 2 bread/meatloaf pans.

Option #2:
Scoop out 2.75 oz (ice cream scoop is good to use) and put into muffin pans. This will bake down to 2 oz portions.

Ladle on homemade sodium free ketchup.

Bake loaves at 350 degrees for 60 minutes. Muffin sizes will not take as long as they bake faster (internal temperature should be at least 165 degrees).
