Ingredients

  • 1 1/2 lbs. new potatoes
  • 1/4 lb. bacon
  • 1 medium onion chopped
  • 1 stalk of celery chopped
  • 1/2 tsp.flour
  • 1/2 tsp sugar
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 1/2 c water
  • 1/2 c cider vinegar

Preparation

Step 1

Boil potatoes, slice and set aside. Fry bacon till crisp and remove. Add onion and celery and cook till tender and remove from pan. Add flour, sugar, and salt and pepper and cook till slightly browned. Add vineger and water and cook till mixture is slightly thickened. Add back the bacon, onion and celery. Pour over potatoes.
