Ingredients

  • For Cake
  • 3 eggs
  • 1 c. sugar
  • 1 t. cinnamon
  • 2/3 c. pumpkin
  • 1 t. lemon juice
  • 1/2 t. ginger
  • 3/4 c. flour
  • 1 t. baking powder
  • 1/4 t. nutmeg
  • 1/2 t. salt
  • 1 c. walnuts finely chopped
  • For Filling
  • 1 c. powdered sugar
  • 3 oz. cream cheese
  • 4 tsp. butter
  • 1/2 tsp. vanilla

Preparation

Step 1

1. Beat eggs on high 5 minutes, gradually add sugar. Stir in pumpkin and juice. Stir in all dry ingredients. Mix well.

2. Spread on greased 15x10x1 cookie sheet jelly pan. Top with finely chopped nuts.

3. Bake at 375 F for 15 minutes. Turn out on a towel, loosen edges with butter knife. Sprinkle with powdered sugar, roll up cake and towel together, cool, unroll and fill.

For Filling
Beat until smooth and spread on cooked cake, Re-roll cake and chill

This cake freezes well.

1 can makes 4 - 5 rolls
