Cranberry-Banana Bread or Muffins

"Carl and Gerrie Jauhola have set their Finnish Alaskan bed-and-breakfast on a hillside near Nenana. Now in its third season, Finnish Alaskan has views in several directions. 'We can see the whole Alaska Range and just the tip of McKinley,' says Gerrie. 'And on the other side, the Manley Hills.' Gerrie serves Finnish or Alaska goodies at breakfast, baking her cranberries into muffins or bread."

Ingredients
- 3/4 cup fresh or frozen cranberries, chopped
- 1 cup sugar, divided
- 1 teaspoon grated orange peel
- 1 3/4 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 2 eggs
- 3/4 cup mashed ripe bananas (2 small)
- 1/3 cup oil
- 1/2 cup chopped walnuts
Preparation
Step 1
In a small mixing bowl, combine cranberries, 1/2 cup sugar and orange peel. Set aside. In a large mixing bowl, sift together flour, remaining sugar, baking powder, baking soda and salt. In medium bowl, combine eggs, bananas and oil; stir well with fork to combine. Add mixture to dry ingredients, stirring just enough to moisten. Stir in cranberry mixture and walnuts.
Pour into a well-greased and floured, or parchment-lined, 9-by-5-by-3-inch loaf pan or paper-lined muffin cups. Bake in preheated 350 F oven for 1 hour (bread) or 16 to 20 minutes (muffins). Should be golden brown; an inserted wooden toothpick should come out clean. Cool.
