Ingredients

  • 12 ounces black beans
  • 1 Cup of Quinoa
  • 3 tablespoons sherry vinegar
  • 1 tablespoon of soy sauce
  • 1 tablespoon of fresh lime juice
  • 1 chipotle in adobe, minced
  • 1/4 cup plus two tablespoons extra dry virgin olive oil
  • 6 scallions, white and light green parts only, thinly sliced
  • 1 small red onion, finely diced
  • 1 yellow pepper, finely diced
  • 1/4 chopped cilantro

Step 1

1. In a large bowl whisk together vinegar, lime juice, soy sauce and chipotle.
2. Add olive oil slowly and whisk till blended
3.Mix everything together and add salt to taste
