Ingredients

    Baked pie shell

    Cups milk

  • 1/2

    C buttermilk

  • 1

    C sugar

  • 1/2

    C lemon juice

  • 1

    tsp lemon zest

  • 1/4

    C plus 1 Tblsp corn starch

  • 4

    egg yolks lightly beaten

  • 2

    tsp butter

  • Meringue

  • 4

    egg whites

  • 2/3

    C sugar

  • pinch salt

  • 1/4

    tsp cream tarter

  • 1

    tsp vanilla

Directions

Mix sugar and cornstarch,in med sauce pan. Stir in milk and buttermilk.Heat stirring constantly until starts to thicken. Beat eggs with lemon juice, zest, and eggs in med bowl. Pour 1/3 milk mixture in eggs and stir.Add back to pan and cook until thick and bubbles. stir in butter Pour into bowl and cover top with saran wrap to prevent skin forming. Chill.Add to pie crust when chilled. Place egg whites,vanilla, sugar, salt, cream tarter.in med heat prof bowl. Place bowl into pan on stove with simmering water like a double broiler. Beat until stiff. Add to pie and seal to edges and bake 400 for 10 min.until golden brown.
