Ingredients
- 1 Tbsp. vegetable oil
- 1/2 each medium green, red, and yellow bell peppers cut in 1-inch chunks
- 1 medium onion cut in 1-inch chunks
- 1 can (14.5 ounces) diced tomatoes, drained
- 2-3 tsp. Cajun seasoning
- 1 can (30 ounces) Brooks Mild Chili Beans in Chili Sauce
- 1 tsp. salt
- 1/4 tsp. black pepper
- 1 lb. ring smoked turkey sausage, cut into 1-inch slices
- 3 cups hot cooked white rice
- Hot sauce to pass
Preparation
Step 1
In large skillet, heat oil over medium-high heat.
Add bell peppers and onion and cook about 10 minutes or until crisp tender, stirring occasionally.
Add tomatoes, Cajun seasoning, beans, salt, pepper, and turkey sausage and cook until heated through.
Stir in rice and serve. Serve with hot sauce
