Baked Apple Cider Donut Holes

Ingredients
- Cinnamon Sugar:
- 1 cup apple cider
- 2 whole cloves
- 2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp ground cinnamon
- 1/4 tsp salt
- 1 lrg egg
- 2 TBS butter, melted
- 2/3 cup brown sugar
- 1/2 cup buttermilk
- 1 tsp vanilla extract
- 2 TBS applesauce
- 4 TBS butter, melted
- 1 cup granulated sugar
- 2 TBS ground cinnamon

Preparation
Step 1
1) In a small saucepan, simmere apple cider and cloves together for 10 - 15 mins. You want to reduce the apple cider to 1/2 cup. Remove cloves and place cider in the refrigerator to cool while you prepare the donut batter.
2) Preheat oven to 350 degrees F. Spray mini muffin pan with nonstick cooking spray. Set aside.
3) In a lrg bowl, whisk together flour, baking powder, baking soda, cinnamon and salt. Set aside.
4) In a med bowl, whisk together egg, melted butter and brown sugar together.
5) Add buttermilk, vanilla, applesauce and apple cider to egg mixture.
6) Add wet ingredients to dry ingredients. Mix until just combined.
7) Pour batter into prepared mini muffinpan, filling 3/4 of the way full. Bake for 9 - 10 mins or until toothpick inserted into ceenter comes out clean.
Cinnnamon Sugar:
In a small bowl, mix sugar and cinnamon together. Dip donut holes into melted butter and then roll into cinnamon-sugar.
