Cheese Soup

Ingredients

  • 1/2 c onion, chopped
  • 1/4 lbs. butter
  • 1/2 c flour
  • 1 T cornstarch
  • 4 t paprika
  • dash of pepper
  • 1 qt. milk
  • 16 oz. chicken broth
  • 1/2 c finely diced celery
  • 1/2 c finely sliced carrots
  • 1/2 lb. cut processed cheese (like Velveeta)
  • 1/4 lb. cheddar, cut up

Preparation

Step 1

Brown onion in butter. Add flour, cornstarch, paprika and pepper. Remove from heat while stirring until smooth. Add a little of the milk and broth at first and then the rest and simmer for 20 minutes.
In a small amount of water and in a separate pan cook the celery and carrots. Add, including the water, the vegetables to the other mixture. Then add cheeses. Stir well to blend cheeses, but do not boil when reheating.
