cup chopped, fresh herbs
rosemary, parsley, oregano, thyme
cloves garlic, minced
tsp. coarse salt
tsp. ground black pepper
four-bone beef rib roast, 8-9 lb.
Heat oven to 450. Chop herbs fine and combine herbs thru pepper. Rub mix over beef, including underside. Place bones down on roasting rack. Cook at 450 for 15 min., reduce heat to 250, cook for 3 hours or until internal temp is 120. Remove from oven, let sit for 20 min.
