Apple and Coconut Macaroons

Ingredients

  • 14 oz. sweetened flaked coconut
  • 2 T flour
  • 14 oz. condensed sweetened milk
  • 1 apple peeled and diced small
  • 1/4 tsp. cinnamon
  • 1 tsp vanilla
  • 2 egg whites (at room temperature)
  • 1/4 tsp. salt

Preparation

Step 1

Preheat oven to 325 degrees. In large bowl mix coconut and flour to coat coconut. In a separate bowl mix the milk, apples, cinnamon and vanilla.

In another bowl whip the egg whites and salt to form peaks.

Pour the milk mixture into the coconut and combine well. Carefully fold in the egg whites.

Drop 2 tsp of batter onto baking sheet lined with parchment paper. Sprinkle with cinnamon is desired.

Bake 25-30 minutes until golden brown. Cool on wire racks.
