pignolli cookies

Ingredients

  • 1 lb. almond paste in box
  • 3-4 egg whites
  • 1 1/2 c sugar
  • 1/4 tsp. vanilla
  • 1/4 tsp. cinnamon
  • Bag of pignolli nuts (pine nuts)

Preparation

Step 1

Mix 2-3 egg whites with macaroons and sugar. If too dry add extra egg white. Add vanilla and cinnamon. Use parchment paper on cookie sheets. Roll into balls and roll in pignolli nuts. Place on cookie sheet and press them flat. Add more pignollis if needed. Bake at 350 for 15-20 minutes or until light golden brown.Let cool very well before removing from cookie sheet.
