Ingredients

  • 1 c yellow cornmeal
  • 1/2 c flour
  • 1-1/2 t baking powder
  • 1 t sugar
  • 1/2 t salt
  • 2 oz. pepper jack cheese or cheddar cheese, shredded (1/2 c)
  • 1/2 c finely chopped onion
  • 1/3 c finely chopped red sweet pepper
  • 1 egg, lightly beaten
  • 2/3 c light lager
  • Vegetable oil for deep frying
  • Snipped fresh flat-leaf Italian parsley
  • Pepper jelly

Step 1

In a medium bowl mix cornmeal, flour, baking powder, sugar and salt.Add cheese, onion, and peppers; toss to combine. Make a well at center of flour mixture. In another bowl, mix egg and beer. Add all at once to flour mixture, stir until just moistened.
In a 3 qt. Saucepan, heat 2" of oil to 375. For each hush puppy, droop one rounded tablespoon of batter into hot oil. Fry 3-4 at a time, for 3 minutes or until golden brown, turning once. Drain on paper towels. Sprinkle with parsley, if desired.
In small sauce pan, heat pepper jelly just until melted. Serve hush puppies warm with pepper jelly.
