Country-Style Spiced Sausage Patties

To really help improve the flavor of the pork sausage, I encourage you to let it sit overnight in the fridge for the spices to permeate the pork. Any leftovers can be stored in the fridge and reheated in a toaster oven at 350 degrees for approx 5 – 10 minutes for a quick weekday breakfast.
Ingredients
- 2 lbs ground pork
- 2 teaspoons sea salt
- 2 teaspoons coarsely ground black pepper
- 2 teaspoons each: dried sage, thyme, oregano, savory
- 1 tablespoon freshly ground fennel
- 1 tablespoon freshly grated ginger
- 1/8 teaspoon each freshly ground cloves and nutmeg
- 1/8 teaspoon cayenne pepper
- 2 tablespoons coconut oil

Preparation
Step 1
Heat coconut oil over medium heat in a large cast iron skillet.
Place all ingredients in a bowl and mix well with your hands until fully incorporated.
Cook a small piece to test to taste, then adjust flavor accordingly.
Form rest into small patties about ½ inch thick and 3″ in diameer.
Place in the pan and fry in batches.
Flip after about 7 – 10 minutes and fry for another five minutes on the other side.
