Ingredients

  • Marinade

  • 1/2

    cup (125 ml) hoisin sauce

  • 1

    tablespoon (15 ml) rice vinegar

  • 1

    teaspoon (5 ml) sesame oil

  • 2

    cloves garlic, finely chopped

  • Skewers

  • 1 1/2

lbs (675 g) skinless and boneless chicken breast halves, cut into cubes

  • 2

red bell peppers, seeded and each cut into 12 cubes

  • 12

    large white button mushrooms, halved

  • The white and pale green part of green onions, cut into 16 2-inch (5-cm) pieces

  • 2

    tablespoons (30 ml) canola oil

  • Salt and pepper

  • 8

    large wooden skewers

Directions

Marinade In a large bowl, combine all the ingredients. Season with salt and pepper. Add the chicken and toss to coat. Set aside.
Skewers In a bowl, combine the vegetables and oil. Season with salt and pepper. Preheat the grill, setting the burners on medium. Oil the grate. Thread the chicken onto the skewers, alternating with the bell peppers and mushrooms. Thread the green onion sections at each end of the skewers to prevent the wood from burning. Grill the skewers for 4 to 5 minutes per side or until the chicken is cooked through.

Note By covering the tips of the skewers with green onions, you do not have to soak the skewers in water to prevent them from burning. Sweet marinades caramelize quickly and burn easily. For long cooking, it would be necessary to use the indirect cooking method.
