Carrot Cake

  • 2 cups flour
  • 1 teaspoon soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 cups sugar
  • 1 1/2 cups vegetable oil
  • 4 eggs
  • 3 cups grated carrots



Step 1

Mix the dry ingredients together. Add the oil and bland. Add the eggs one at a time and beat after each addition. Finally, add the carrots and blend well. Pour into 3 layers and bake at 350 for 30 minutes. If using a 9 x 13 inch pan, bake for one hour.


Beat together an 8 ounce package of cream cheese, one stick butter, and 2 teaspoons vanilla. Add powdered sugar to desired consistency, then stir in one cup coconut.
