Homemade Fresh Pasta Dough

Excellent! This recipe was given to me by my friend Shelby. It is a very light tasting dough that works well in a hand rolling pasta machine or simply cut with a knife. Four Servings

Ingredients

  • 2 cups all purpose flour
  • 1 egg yolk
  • 3 whole eggs
  • 2 tablespoons olive oil

Preparation

Step 1

Sift flour to loosen it up and aerate.
Using a fork beat the whole eggs, egg yolk and olive oil in a bowl.
Slowly begin to add flour, stirring with a fork until combined. (I only added about 1 ¾ cups ((or so)) of the flour at this point) and then begin to knead the dough in the bowl (hands work best for this) & then dump the dough onto a lightly floured surface and continue kneading (adding the left over flour if/as needed) until the dough is soft and smooth, approximately 2-5 minutes, the dough should be stretchy. Form dough into a ball and cover tightly with plastic wrap, flatten into a disc and let rest for about 30 minutes. Then feed through hand pasta cutting machine or cut with a knife and let it hang until ready to cook, or freeze it.
