BEEF TACOS WITH CORN SALSA

Ingredients

  • 1 tsp oil
  • 3/4 cup chopped onion
  • 1 clove garlic, minced
  • 1 1/2 lbs extra-lean ground beef
  • 2 tbsp tomato paste
  • 1 tsp chili powder
  • 1/4 tsp each salt and pepper
  • 1 avocado, pitted, peeled and diced
  • 1 cup frozen corn kernels, thawed
  • 1/2 cu cherry tomatoes, quartered
  • 1 green onion, sliced
  • 1 tsp grated lime zest
  • 1 tsp lime juice
  • 8 - 6 " flour tortillas
  • 1/4 cup sour cream
  • 1/2 cup shredded Cheddar cheese

Preparation

Step 1

In non-stick skillet, heat oil over medium heat; cook onion, stirring occasionally, until softened, 4 to 5 minutes. Add garlic; cook for 1 minute.

Add beef; cook, breaking up with back of spoon, until no pink remains, about 5 minutes. Stir in tomato paste, chili powder and half each of the salt and pepper. Remove from heat and keep warm.

Meanwhile, in a bowl, combine avocado, corn, tomatoes, green onion, lime zest, lime juice and remaining salt and pepper. Set aside.

Heat tortillas according to package directions. Divide beef mixture among tortillas; top each with corn salsa, sour cream and Cheddar cheese.
