  • 2-1/2 c left over mash potatoes
  • 1/4 c finely shredded Parmesan or sharp cheddar cheese
  • 1 egg
  • 2 T flour
  • 2 T chopped chives
  • 1-1/4 c panko bread crumbs
  • 1/4 c butter
  • 1/2 c sour cream
  • 1 t srirachi


Preparation time 15mins
Cooking time 35mins


Step 1

Place baking sheet in oven and preheat it to 425. Meanwhile, microwave leftover potatoes in medium bowl for 30 seconds on 100% power, stir to soften. Stir in cheese, egg, flour, chives and 1/2 t kosher salt. Place panko bread crumbs in shallow dish. Using a small cookie scoop, drop potato mixture into the bread crumbs a little at a time. Roll to coat with bread crumbs and shape into tots. Add butter to preheated pan. Return to oven for 1-2 minutes or until melted. Tilt to distribute butter. Arrange potatoes on prepared pan.
Bake 8 minutes, turn and bake for another 8 minutes more or until golden. For dipping sauce, combine sour cream and srirachi. Serve with potatoes.
