Caesar Salad Dressing

This recipe was given to me from my good friend Michael. It is delicious. Serves 6 to 8 people.

Ingredients

  • 2 heads of romain lettuce
  • 2-3 cloves fresh garlic
  • 2 or 3 anchovies
  • 1 cup of high grade olive oil
  • 2 egg yolks
  • 1 cup of croutons
  • 2 oz of fresh lemon juice
  • 1 tsp Dijon mustard
  • 2 splashes of Worcestershire
  • 2 splashes of Tabasco
  • Parmesan cheese
  • salt and pepper
  • 1/2 cup of bacon bits

Preparation

Helpful Hints:
Make your own croutons with a splash of garlic salt
Make your own bacon bits with thick slice bacon
Crush garlic in a press coated with a drop of olive oil

Important:
Once you begin pouring the olive oil, do not stop whipping. The olive oil must be added as a fine bead, i.e. relatively slowly.

Directions:
Wash romaine and dry with a spinner, place in the fridge wrapped in moist paper towels.
Crush garlic in a large bowl
Add 1/2 tsp of salt
Add 2 anchovies
Using a big spoon or pestal, grind above ingredients 1 through 4 into a pulp
Add lemon juice and wisk
Add egg yolks and wisk
While constantly wisking, pour olive oil in a very fine bead until oil is finished. Do not stop wisking
Add mustard, tabasco, worcestershire, and wisk
Add lettuce, croutons, bacon bits and cheese, then toss until coated evenly
Add fresh group pepper to individual servings if desired.
