Step 1

Prepare 1 pound spaghetti. IN a large skillet over medium heat add 1/4 c CVOO and 1/4 pound chopped pancetta, brown for 2 minutes. Then add 1 tsp red pepper flakes and 5-6 cloves chopped garlic and cook 2-3 minutes. THen add 1/2 c dry white wine and stir up all pan drippings. In a separate bowl beat 2 large egg yolks and add 1 ladleful of pasta cooking water and temper the eggs. Add pasta to skillet with pancetta oil. Then poor in egg mixure. Toss quickly to coat pasta but don't want to cook eggs. Remove from pan and add handful of Romano cheese, lots a pepper and a little salt. Continue to toss. Garnish with chopped fresh parsley and Romano cheese.
