Ingredients

  • 8 bone in chicken thighs
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 Spanish onion
  • 1 Package of mushrooms
  • 1/2 cup chopped celery
  • 2 teaspoons fresh chopped rosemary
  • 4 cloves of garlic
  • 1 1/3 cup tomato sauce
  • white or brown rice

Preparation

Step 1

1) Preheat oven to 350
2) Add to 2 teaspoons of oil to large pan, swirl to coat.
3) Add 4 chicken thighs at a time, cook for 4 minutes on each side or until browned add salt and pepper to chicken.
4) Remove chicken from the pan and keep the pan warm.
5) Add 2 teaspoons to olive oil, add diced peppers, 1 cup of onion, celery, rosemary, minced garlic stirring frequently cook for 3 minutes.
6) Add mushrooms and cook for 6 minutes. Stir in marinara and cook for 1 minute. 7)Spread vegetable mixture in a 13x9 baking dish.
8) Arrange chicken on top and bake for 30 minutes.
