LAMB CHOPS WITH ROSEMARY AND BALSAMIC TOMATOES

Ingredients
- 2 tsp. olive oil
- 4 lean lamb chops - 1 1/4" thick
- 2 tbsp. shopped fresh rosemary
- salt and pepper
- 2 cups cherry tomatoes
- 2 scallion, thinly sliced
- 2 tbsp. balsamic vinegar

Step 1
Heat 1 tsp. oil in skillet over medium high heat. Sprinkle lamb with rosemary, salt and pepper. Place lamb in skillet and cook, turning once, until 145F about 10 minutes. Transfer to plate and keep warm. Reduce heat to medium and add 1 tsp. oil. Add tomatoes and scallions and cook, stirring often, just until tomatoes are softened, about 2'. Add vinegar and cook 30 seconds. Serve lamb with tomatoes.
