Pumpkin Bread with Applesauce variation

  • 1 cup sugar
  • 1/2 cup golden brown sugar, firmly packed
  • 1 cup cooked or canned pumpkin
  • OR 1 1/4 cup applesauce
  • 1/2 cup salad oil
  • 2 eggs, unbeaten
  • 2 cups sifted all-purpose flour
  • 1 t soda
  • 1/2 t each salt, nutmeg, and cinnamon
  • 1/4 teaspoon ginger
  • 1 cup raisins, optional
  • 3/4 cup chopped nuts
  • 1/4 cup water (do not use if using applesauce)



Step 1

Combine sugars, pumpkin, oil and eggs; beat until well blended. Sift together flour, soda, salt and spices; add and mix eell. Stir in raisins, nuts, and water. Spoon into well oiled 9x5x3 loaf pan. Bake at 350 for 65 to 75 minutes or until done when tested. Turn out on rack to cool thoroughly.
