Crispy Fish Sticks

Ingredients
- 3 French Bread slices (cubed)
- 3 T. Mayonnaise
- 2 t. Water
- 1 t. Lemon Juice
- 1/2 t. Lemon Rind (grated)
- 1 1/2 # Alaskan Pollock or other White Fish Fillet (such as Haddock and Cod)
- (cut into 1 inch wide strips)
- Vegetable Cooking Spray

Step 1
1. Process the French Bread in a Food Processor until fine crumbs (about 30 seconds). Sprinkle crumbs on an ungreased baking sheet; bake at 350 degrees for 15 minutes or until browned. Place in a shallow bowl and set aside.
2. Combine Mayo, Water, Juice, and Rind in a shallow bowl; stir well. Cut the Fish into 1" strips.
3. Dip fish in Mayo mixture and dredge in bread crumbs. Place Fish on baking sheet coated with cooking spray. Bake at 425 degrees for 25 minutes or until outside is crispy and browned.
4. Yields 6 servings.
