Ingredients
- 2-3 cups leftover mashed potatoes
- 2 eggs
- Finely grated onion (to taste)
- 2 tablespoons flour (or more if needed for patties to stay together)
Preparation
Step 1
Mix well and form into potato patties, dredge in additional flour and fry in a large fry pan in a little vegetable oil. Drain potato pancakes on paper towels, sprinkle with salt and pepper (I like them sprinkled fresh chives too). Keep warm in a 200 degree oven if making in batches.
