Ingredients
- Salsa:
- 3 large nectarines diced
- 1/2 cup diced fennel
- 2 tbsp. chopped cilantro
- 2 tbsp. lime juice
- 1 tbsp. minced shallots
- 1 small jalapeno, seeded and minced
- 1/2 tsp. salt
- Kebabs:
- 2 tsp. cumin seeds
- 1 tbsp. olive oil
- 1 1/2 tsp. dried oregano, crushed
- 1/4 tsp. @ salt & pepper
- 2 # boneless skinless chicken breasts cut into 1" cubes

Step 1
Combine salsa ingredients and set aside.
Set a small skillet over ,medium heat and toast the cumin seeds stirring constantly until fragrant - 3-4 ". Allow to cool; transfer to small plastic bag and crush with bottom of pan, rolling pin, or etc.
Combine cumin, oil, oregano, s & p in a large bowl; add chicken and toss to coat. Divide chicken among 8 skewers. Coat grill rack with cooking spray. Preheat grill to medium-high. Grill kebabs turning occasionally until chicken is cooked through 6-7 minutes. Serve with salsa.
