Fried Rice

Serves 3-4

Ingredients

  • 2 t veg oil, divided
  • 1/2 C each chopped onion and chopped carrots
  • 1/2 C peas
  • 1/2 C pineapple, diced
  • 1/2 C ham
  • 2 C cooked rice
  • salt and pepper to taste
  • 1 T oyster sauce
  • 1 t soy sauce
  • 1/2 pineapple, cut lengthwise and hollowed out.
  • 1/4 C shrimp

Preparation

Step 1

Add 1t oil to pan. Sauce onion and carrots. Add peas, pineapple, and meat and cook 1 min. Add rice and seasonings. Pour fried rice into pineapple shell. Add oil to pan and sauce shrimp. Salt to taste. Top rice with shrimp.
