Spinach Bacon and Onion Dip

Ingredients

  • 4 slices of bacon (cooked & crumbled)
  • 1/4 cup fried onions (crumbled)
  • 1 medium sized onion (chopped)
  • 4 cloves of garlic (finely chopped)
  • 3 tablespoons olive oil
  • 1/2 can (15 ounces) of diced tomatoes, drained
  • 1 1/2 cup chopped frozen spinach, drained
  • 3 tablespoons butter (salted)
  • 2 tablespoons flour
  • 1/2 cup heavy cream
  • 2 ounces cream cheese
  • 1 1/2 cup milk
  • 4 ounces cheddar cheese
  • 4 ounces sharp cheddar cheese
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon oregano
  • 1 teaspoon black pepper
  • 1 teaspoon seasoned salt

Preparation

Step 1

Place the oil, onions and garlic in a skillet and sauté until onions are translucent. Add the diced tomatoes and cook for about 3 minutes until it's mixed well with other ingredients. Then add the spinach and cook for about another 3 minutes.
In a pot, melt the butter. Then add the flour and cook until most of the flour taste is gone, but still a yellow color. Whisk on low heat. Add the heavy cream and whisk until well mixed. Then add milk. After milk is mixed, whisk in the cream cheese. Next, add both cheeses and mix until fully melted. Add salt, black pepper, seasoned salt, oregano and cayenne pepper.
Add all the ingredients from the skillet to the cheese mixture and stir until evenly mixed. Mix the bacon and fried onion crumbles. Place dip in serving bowl and top with the bacon and fried onion mixture.
The dip tastes awesome with a variety of things, such as fried asparagus, chips, carrots and bread!
