Blackberry Mousse for cheesecake

  • Mousse:
  • Blackberry Sauce
  • 3 C. fresh blackberried
  • 1/2 C sugar
  • 1 Tbsp vanilla extract
  • 1 orange freah squeeze juice and zest
  • 3/4 C sauce
  • 1 small pkg unflavored gelatin
  • 3 Tbsp cold water
  • 1 large egg white
  • 3/4 C heavy cream



Step 1

Sauce: Add all ingredients in medium saucepan over medium heat. Cook and stir for 20 minutes untill berries are broke down. Pour through sieve usong spatula to push all liquid out.
Mousse: Disolve gelatin in water then mix with blackberry sauce. with mixer beat egg white untill stiff peaks form. Fold in blackberry sauce using rubber spatula until no white streaks remain. in another bowl beat heavy cream until soft peaks form. Fold in blackberry mixture. refrigerate 2 hours.
