Ingredients
- 1 cup all-natural ketchup
- 1 1/2 cups brown sugar
- 3/4 cups pure pineapple juice (not from concentrate)
- 1/2 cup crushed pineapple
- 1/2 cup bourbon (I used Jim Beam)*
- 1/3 cup molasses
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 Teaspoon** chipotle chili pepper ( I used McCormicks brand )

DIRECTIONS
Pour all ingredients into a medium sized sauce pan, and bring to a boil.
Reduce heat and simmer for 30 to 40 minutes ( I let mine simmer for an little over an hour), until thick and reduced by about half. Strain off the pineapple for a smoother sauce.
NOTE
* Use a less boubon (1/4 C) for a little less kick.
**Use additional chipotle chili powder for added heat!
Place in air tight container and let it sit for a couple of days in the fridge to allow all that goodness to fuse together :)
Sounds good. I'd probably let cool and puree the sauce some leaving the pineapple in Just for that little extra taste
