Meltaway Cookies

Ingredients

  • 1 C butter
  • 1/2 C sifted confectioners sugar
  • 1 tsp vanilla
  • 2 1/4 C cake flour
  • 1/4 tsp salt

Preparation

Step 1

Preheat oven to 400 degrees

In a mixing bowl, blend butter, confectioners sugar and vanilla thoroughly.

Measure flour by spooning into cup and leveling off or by sifting; stir flour and salt together; then blend dry ingredients with the butter mixture.

Drop by teaspoonful onto ungreased baking sheet; bake 8 minutes or until set, but not brown.

While still warm, dip into confectioners sugar, let cool completely

NOTE:
If you want to add nuts add 3/4 c chopped nuts to the dough.

If you want Almond Meltaways substitute almond extract for the vanilla, then top each cookie with a blanched almond half before baking.

For a party meltaway, substitute rum extract for the vanilla, then top each cookie with a candied cherry before baking.
