- 3- 8 oz. pkg. cream cheese, soft
- 1 1/8 c. sugar
- 3 eggs
- 1 1/2 tsp. vanilla
- 1 1/2 tsp. lemon juice
- 28 Nabisco Nilla wafers, vanilla or chocolate
- 1 can cherry pie filling
Using muffin pans, line 28 muffin cups with a cupcake paper. Put 1 Nilla wafer in each cup. Beat first 5 ingredients until fluffy. Spoon in over Nilla wafer, about 2/3 way full.
Bake at 375 for 20 minutes. (don't over bake)
Top with cherry pie filling when cooled. Refrigerate.
