Cranberry Nut Chocolate Chip Cookies

  • 3/4 cup all-purpose flour
  • 3/4 cup whole wheat flour
  • 3/4 cup oats
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup dried cranberries
  • 2 1/2 TBS finely chopped walnuts
  • 2 1/2 TBS mini semisweet chocolate chips
  • 3/4 cup packed brown sugar
  • 5 TBS butter, softened
  • 2 TBS honey
  • 3/4 tsp vanilla
  • 1 lrg egg
  • 1 lrg egg white

Step 1

1) Lightly spoon flours into dry measuring cups, level with a knife. Combine flours, oats, baking powder, baking soda, salt, cranberries, walnuts and chocolate chips in a lrg bowl.

2) Combine sugar and butter in a lrg bowl, beat with a mixer at med speed until light and fluffy. Add honey, vanilla, egg and egg white; beat well. Add flour mixture; beat at low speed until well blended. Cover and refrigerate 8 hrs or overnight.

3) Preheat oven to 350 degrees F. Drop batther by tablespoonfuls onto a baking sheet coated with cooking spray. Bake for 10 mins. Cool 2 mins then remove to a wire rack to completely cool.
