Chocolate Peanut Saltine Toffee CARLA HALL
- CHOCOLATE PEANUT SALTINE TOFFEE
- 1 sleeve saltine crackers (enough to fill a 9x13-inch baking dish)
- 2 sticks butter
- 1 cup light brown sugar
- 2 tablespoons honey
- 1 1/4 cup bittersweet chocolate chips (melted)
- 1 cup roasted salted peanuts (finely chopped)
Preheat the oven to 375ºF. Line a 9x13-inch baking dish with parchment paper. Spread saltine crackers out into an even layer.
In a medium saucepan add the butter and heat over medium heat. Add the brown sugar and honey, whisking to combine. Continue stirring until the sugar dissolves and the mixture comes to a simmer. Allow to cook for 2-3 minutes, until slightly thickened. Immediately pour over the saltine crackers. Bake for 5-6 minutes. Remove and allow to cool for 5 minutes.
Dollop the melted chocolate over the top of the saltines and use an offset spatula to smooth the top. Sprinkle with peanuts and allow to set in the refrigerator. Once the chocolate has set, break into pieces and enjoy!
