Preparation

Step 1

Put pinch of sugar in bowl. Add warm water. Add yeast, stir well until yeast is dissolved. Beat eggs until stiff (5 minutes).

In another bowl, beat fats, salt and sugar until creamy (5 minutes). On low speed add boiling water. Increase speed and add eggs. When combined, add yeast and beat a minute more.

Sift 2 cups flour and add to yeast mixture. Bet 2 minutes until blended. Add rest of flour 2 cups at a time, beating 2 minutes after each addition. Brush dough with butter. Cover with foil and let rise until doubled. Refrigerate overnight or longer.

Next day gently knead a portion of the dough with as little flour as possible. Roll out 1/2 inch thick, cut with biscuit cutter. Grease bottom of pan. Dip rolls in melted butter and place in pan, barely touching. Rise 3 hours. Bake at 375 F for 15 minutes.
